New
Belgian Restaurant Gives Patrons a Taste of Official Washington
After working as the personal chef to the Irish
Ambassador for the past six years, Claudio Pirollo is bringing his
food down-home, with the opening of his new restaurant, Et Voila!
“I’ve enjoyed preparing meals for Senator Kennedy and
Condoleeza Rice, but now I want to share my food with regular Washingtonians.”
Et Voila!, located in the Palisades neighborhood, opened its doors
on May 6th.
In
addition to catering such high profile events as the annual St.
Patrick’s Day party at the Ambassador’s residence, Pirollo
has worked with his culinary counterparts in other embassies when
they’ve hosted major functions. For example, he’s worked
closely with the notable former French Embassy Chef, Francis Layrle,
and Daniel Boulud. Prior to working for the Irish Ambassador, Pirollo
served as chef for the popular restaurant, Montmartre, a Capitol
Hill favorite.
Chef Pirollo, who was named “Best Young
Chef in Belgium” in 1994, features authentic Belgian cuisine
in his new bistro-style restaurant. The menu includes such traditional
items as Carbonnade á la flamande (Flemish ale-simmered beef
stew) and sugary Lieges waffles. Using only the freshest organic
ingredients, Pirollo is looking forward to introducing Washingtonians
to the dishes he grew up loving.
A highlight of the menu is its desserts,
for Pirollo’s partner, Mickael Cornu, is an expert pastry
chef. Our Pistachio Miserable “is to die for,” Pirollo
says. Palisades neighbors will be happy to learn that Cornu’s
desserts are available to order and take home, as are made-to-order
cakes for special occasions.
